Here in Cleveland, the snow has been falling on and off for the last two weeks, but thankfully (for once!) we were spared from the hit of a winter storm like #Blizzard2016 this past weekend.

Despite the cold temperatures throughout much of the States at this time, you can still get your hands on a lot of wonderful and fresh fruit, like pears, passion fruit, citrus fruit, and one of our favorites, pineapple. An easy and delicious breakfast or a pre- or post- workout snack, this sweet and salty bento will pick you up like a ray of sunshine, both in taste and with its 10 grams of protein to help keep you energized throughout the day.

All you’ll need are:

  • Caribbean pineapples: In season through February. Chopped into one-inch pieces.
  • Raw almonds: One handful.
  • Shredded coconut: Unsweetened, about two tablespoons

Serve your bento with a glass of coconut-aloe water (Trader Joe’s has a lovely, all natural kind) and you’ll swear you’re in Cabo and not Cleveland. Enjoy!
